I’ve mentioned waffles quite a few times in my blog posts, they’re probably mine and J’s favourite pudding, especially as they’re incredibly delicious and you can pretty much add any toppings you want to them 😀
I thought I’d share my favourite recipe for sweet waffles that I found on All Recipes (it was really hard to find any good UK ones, it took me ages as I tested loads of recipes and they were awful!! Some of the others I found were US recipes and they measure in cups, which I do have, but I don’t find it particularly accurate!)
- 2 eggs
- 250g plain flour
- 415ml milk
- 120ml vegetable oil
- 1 tablespoon sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
I usually halve the amounts above, because this recipe makes way too much batter for two people!! Halving the recipe makes 8 waffles in our Andrew James Waffle maker (I usually make four waffles and put the remaining batter in the fridge for the next day. If you do this, get the batter out about 15 mins beforehand so it’s not really goopy and thick!! I also wouldn’t recommend using the mixture after the next day as it starts looking a bit weird with a green/grey tint to it!)
Okay, confession time; I’ve never actually read the method on the website I got this recipe from until now. They do it completely differently to me but, as mine come out okay, I’ll share the way I do it. If you want to see the way they do it, click the link further up the page 🙂 It only takes about 5 minutes to make the waffle batter!
- Add the flour, sugar, salt and baking powder in a bowl and mix well.
- Create a well in the flour mixture, add in the eggs and whisk. Start adding in a bit of milk at a time, whisking slowly until smooth. Add the vegetable oil and vanilla extract and whisk it until it’s all mixed in.
I then heat up my waffle maker until the green light comes on. I generally add a tablespoon and a bit of the mixture to each waffle square and spread out evenly using the back of the spoon.
Our waffle maker has a dial so you can make lighter or darker waffles. I generally have it on a medium setting and cook the waffles for about 6 minutes. Once they’re done on the bottom, I sometimes turn them over and cook for a further minute if I think they need it, or if I’ve forgotten to get out the toppings because it keeps the waffles warm!!
Once they’re ready, I ease them out using a spatula and put them in bowls. I then add a couple of scoops of ice cream (we use Asda’s chocolate one) and some maple syrup (Asda Pure Canadian maple syrup) drizzled over the top. Sometimes I’ll add some mixed berries too! (We buy them frozen from Asda but defrost them overnight.)
