My Favourite Pancake Recipes

If you’re not aware (and I can’t think why on earth you wouldn’t be, unless you’re not from the UK I suppose), it’s only blimmin’ Pancake Day tomorrow!! WHOOP WHOOP!! As you might have guessed, I’m a bit of a pancake fiend. I just absolutely love pancakes. So I thought in celebration of tomorrow, I’d share two of my favourite pancake recipes that you could try out yourselves!

The first is a recipe for the good old traditional thin pancake. You’d generally serve these with a squeeze of lemon and some caster sugar sprinkled in the middle and then roll them up; but to be fair, you could have anything you want in them. Nutella is always a good idea for a filling or fresh fruit; why not try some banana (yuck) or strawberries with a drizzle of golden syrup? This recipe makes about 12 pancakes!

Ingredients:

  • 100g plain flour
  • 2 large eggs
  • Pinch of salt
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying

Method:

  • Put the flour, eggs, milk and a pinch of salt into a bowl, then whisk to a smooth batter. Set aside for 30 mins to rest if you have time, or start cooking straight away. (I always want to make mine straight away so I never put it in the fridge first!!)
  • Put a medium frying pan or crΓͺpe pan over a medium heat and carefully wipe it with some oiled kitchen paper. When it’s hot, cook your pancakes for roughly 1 min on each side until golden. (Best way to see if they’re done is to gently shake the pan every so often, if they’re cooked they should move!)
  • Keep them warm in an low heat oven while you make the rest. (I tend to use a spare pan on a low heat to keep mine warm, but whatever’s easiest for you.)
  • Serve with lemon wedges and sugar, or your favourite filling.

I love the look of these when they’re all rolled up, it reminds me of being a kid and having my mum make pancakes for us! Although there was nothing more disappointing than being super excited and coming home after school for pancakes to find she’d only bloody made savoury pancakes instead!! I mean, what the hell Mum?

Anyway, moving on … My other favourite kind of pancakes are the American-style ones; the thick, fluffy, taste amazing with maple syrup and bacon type pancakes! I use this amazing recipe to make mine! This recipe generally makes about 8 pancakes depending on how big your ladle is!!

Ingredients:

American pancake ingredients

  • 225g plain white flour
  • 4 tsp baking powder
  • 2 tsp golden caster sugar (ain’t nobody got time for buying special sugars; I just use white caster sugar!)
  • 1 tsp salt
  • 2 eggs
  • 300ml milk
  • 50g butter for cooking (optional, if you have really good non-stick pans like I have, I’ve found my pancakes look nicer if I don’t use butter in the pan.)

Method (this is how I do it):

  • Put all the dry ingredients in a mixing bowl; sift if you can be bothered. I tend to whisk the dry ingredients together a bit before adding the wet, just to make sure all the ingredients are mixed up.
  • Make a well in the middle of the flour and add the eggs to the middle. Whisk the eggs but make sure you keep them in that well. This allows small amounts of the dry mixture to be added without it going really heavy.

  • Once you’ve mixed the eggs enough, add the milk a little at a time; still whisking in the middle. The more milk you add, the more you can start to add the flour mix that’s round the edge of the bowl.
  • Once everything has been completely mixed, you can start making your pancakes (and cooking your bacon if you’re adding it. I use an air fryer to cook mine so it takes about 11 minutes, but you could fry or grill yours!)
  • I generally use a ladle and pour the mixture into the middle of a hottish pancake pan. I then use the bottom of the ladle to gently stir the mixture into a round shape (taking care not to touch the bottom of the pan with it).

  • Once I’ve made my round shape, I leave it to cook until it starts to really bubble all over, then I carefully flip it with a plastic fish slice. I then leave it for a minute or so to cook the other side, then transfer it to another pan on a low heat setting to keep it warm while I make the others.

  • Serve with bacon on top and a generous drizzle of maple syrup!!

  1. These look so good! The first pancake recipe is pretty much exactly like the one my entire family has used for years now (it started with my grandma!) except we usually use some butter to grease the pan because for me it tastes nicer than oil.

  3. I think its going to have to be the thicker ones (if im ruining my diet, i might as well go all out! ) Bananas, toffee sauce and Vanilla ice cream to top it off, Now starting to wish it was Pancake day today!
