French Onion Soup Recipe Review

It’s been a while since I’ve done one of these and this is my first savoury recipe challenge! I absolutely love French onion soup, especially with the toasted bread and cheese on top!I used the BBC Good Food’s recipe which you can check out here and as usual, anything in Italics are little things I’ve added to the information. I hope you enjoy 🙂

Ingredients:

  • 50g butter
  • 1 tbsp olive oil
  • 1kg onion, halved and thinly sliced (this is the part that takes the longest to prep, be prepared!!)
  • 1 tsp sugar
  • 4 garlic clove, thinly sliced (we have frozen garlic because it lasts for such a long time – no idea what one cube is equal to though, but that’s what I added!)
  • 2 tbsp plain flour
  • 250ml dry white wine (I used Savignon Blanc for this – I’m not a wine buff but J is and this is what he chose!)
  • 1.3l hot strongly-flavoured beef stock
  • 4-8 slices French bread (we forgot to buy a baguette so we used baps from Asda.)
  • 140g Gruyère, finely grated

Method:

  • Melt the butter with the oil in a large heavy-based pan. Add the onions and fry with the lid on for 10 mins until soft. Sprinkle in the sugar and cook for 20 mins more, stirring frequently, until caramelised. The onions should be really golden, full of flavour and soft when pinched between your fingers. Take care towards the end to ensure that they don’t burn.

  • Add the garlic for the final few mins of the onions’ cooking time, then sprinkle in the flour and stir well. Increase the heat and keep stirring as you gradually add the wine, followed by the hot stock. Cover and simmer for 15-20 mins.
  • To serve, turn on the grill, and toast the bread. Ladle the soup into heatproof bowls. Put a slice or two of toast on top of the bowls of soup, and pile on the cheese. Grill until melted. Alternatively, you can complete the toasts under the grill, then serve them on top.

  • Time: 55 minutes (plus about 15 mins prepping)
  • Difficulty rating: The instructions are really easy to follow, but make sure the onions are really cooked or it’ll end up tasting a bit weak.
  • Taste: It’s so thick and warming, it’s a proper cold day kinda soup and the baguette and cheese on top just finishes it off perfectly!!
  • Would I make it again?: Definitely, I’m probably going to make another batch at the weekend and freeze it!
  • Verdict: 5/5.
