I really dislike eating bananas. There, I said it. I hate the smell, the taste and the texture.
That being said though, I love those little foam banana sweets, having blended bananas in my morning smoothies and banana loaf. Recently, I bought way too many bananas and instead of them going to waste, I thought I’d put them to good use and make a banana loaf (with a surprise inside!)
I always like a simple recipe to follow and I stumbled on this easy one from BBC Good Food. As usual, anything I’ve written in italics, is something that I’ve added or commented on!
Ingredients:
- 140g butter, softened, plus extra for the tin
- 140g caster sugar
- 2 large eggs, beaten
- 140g self-raising flour
- 1 tsp baking powder
- 2 very ripe bananas, mashed
- 50g icing sugar (I didn’t bother drizzling icing sugar over mine, it was moist enough already!)
- handful dried banana chips, for decoration (I didn’t bother with these)
Method:
- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment. (I attempted to line the base and sides, but it kept going weird, so I didn’t bother in the end. I did however grease it, which was absolutely fine!)
- Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder and bananas. (At this stage I poured in a large handful of chocolate chips and mixed the mixture well!)
- Pour into the tin (probably a good idea to mix it a little at this stage as I’d found all my banana was in the middle of the loaf) and bake for about 30 mins until a skewer comes out clean.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix the icing sugar with 2-3 tsp water to make a runny icing. Drizzle the icing across the top of the cake and decorate with banana chips.
I’m so gutted as it rose perfectly but by the time I went to take pics, the middle had sagged ever so slightly. I think that I needed to mix it more in the tin before baking and it possibly could have done with another 5 mins or so in the oven! That being said, it didn’t stop it from tasting delicious!!
- Time: Prep – 15 mins, cooking time – 30 mins, cooling time – 10 mins.
- Difficulty rating: It’s really easy to make and it doesn’t take a huge amount of preparation 😀
- Taste: It tasted amazing; cakey, bananary and chocolatey all at once!! Bananas taste so much better when they’re cooked 😀
- Would I make it again?: Yup, I’ve already made another loaf since the first one and it’s definitely a big hit in our house 🙂
- Verdict: 5/5.

Holy crap I need to find any excuse I can to make this banana loaf because it looks amazing and I actually feel like I am drooling at my screen right now. Off to go and find any kind of sweets in the house now that I can scrunch up!

OMG FOAMY BANANAS, they are the best! There used to be some they’d sell in County Mall in Crawley which were chocolate coated and omg were they amazing. On another note, the cake sounds divine and really not a lot of hassle at all! Definitely going to have to make this ASAP 🙂 xx

Mmm this looks delicous! I love banana cake and this loaf sounds just as good. You can’t tell from the pictures that there was a sag in the middle 🙂
